The gluten-free diet also eliminates a lot of unhealthy foods. Peter Gibson is the director of gastroenterology of Monash University.

Alan interviewed Peter when he was writing the book. Peter also conducted a study on gluten-free diets. He has stated that the benefits that people achieve from following a gluten-free diet may be psychological.
